Clean up gh workflows

**Please describe the problem that needs to be solved by this feature**
From what I've heard from Chris, some of the GH workflows + scripts I wrote a few months back aren't really being used. They should be cleaned up to prevent confusion.

**How important is this feature to you? (Software team will re-prioritize all tickets based on current workload)**
