Current macos install documentation does not fully describe the compiler workaround required to bypass clang. Also, docs seems to suggest that you can work around conda/mamba. If this can be done in an easy manner, you can add this to the docs. Otherwise, change conda/mamba to be a requirement.
Note: currently, some issue exist with readthedocs compilation. This will need to be fixed (if I have some time, I can do this; I suspect that I have some outdated packages compared to readthedocs) before you can see the online docs updated. For now, you can try building the documentation locally in the docs folder (run "bash build_docs.sh").
