I located the issue and apparently something broke when moving from Ubuntu 18.04 (the one in the screenshots) to Ubuntu 20.04 (GNOME itself moved to 3.36).
The gnome-shell.css (which defines the top bar and the left side bar) can be found in /home/$USER/.themes/Aritim-Light-GTK/gnome-shell/.
I'm trying to modify it but this will take some time as I don't use GNOME and I have very little time to concentrate on side-projects like themes right now. Hence the "help wanted" label, I'd be glad if someone is willing to help me on the task.
One solution I found was that it still looks good with Dash To Panel. I don't have any experience with making GNOME Shell themes, but I might give fixing this a try.
Describe the bug
The GNOME Shell theme looks atrocious in Ubuntu 20.04, the dock is white while the top bar is dark.
To Reproduce
Use the GNOME Shell theme on Ubuntu 20.04.
Expected behavior
The GNOME Shell theme should look like the screenshots.
