Logging UI Add variables, read variables is a mess, rework it

odd dropdown menu colors, other workflow stuff that is counter intuitive.

work flow is add new variable, add/remove it from the read list.

that work flow makes no sense with dropdown menus.

need +/- and -> / <- arrows to add/remove them from "read" (active) variables.
