[Changes]: See if Legitimate interest section needs an update

Description

Recently the EDPB has written guidelines about using legitimate interest as a legal basis: https://www.edpb.europa.eu/system/files/2024-10/edpb_guidelines_202401_legitimateinterest_en.pdf (learned that via ICTRecht).

We should see if the DPH section on legitimate interest is still up to date and ask one of the privacy officers to look it over/check if we make any changes.

Action required

• Read the EDPB guidelines
• If needed, update the legitimate interest part of the DPH
• Ask feedback/input from (a) privacy officer(s)
