In the UU's brand policy page, Zilla Slab is mentioned as an official typeface, but it is advised not to be used in the main text:
The Zilla Slab is a modern slab serif combining smooth lines and subtile thin-thick ratios. Giving the font a surprising industrial look and feel that remains accessible Centres and institutes can use the Zilla Slab as an alternative for the Merriweather. We recommend using the Zilla Slab for headlines, quotes etc., for body text use the Merriweather or Open Sans.
It would be nice if that could be implemented in the UU class, such that by setting an option one can set the fonts of headers and quotes to Zilla Slab—and keep other parts of the texts with Merriweather of Open Sans—making the document look more elegant look.
I had difficulty importing the font from Google Fonts, but maybe you can implement it.
