Tell us about the new connector you’d like to have

I have recently copilot-metrics-viewer to gather statistics on Copilot usage within my company, and I think it would be a great idea to create a dedicated connector for it.

Describe the context around this new connector

The GitHub Copilot API currently only allows retrieving data for the past 30 days. Using an Airbyte connector could enable daily refreshes, allowing for a longer analysis period over time.

Describe the alternative you are considering or using
An alternative would be to integrate Copilot metrics into the existing GitHub source connector. However, since Copilot metrics are not tied to individual repositories, they would end up as separate tables rather than being integrated with other GitHub data.
