Update the terraform README page with corrected names and ® usage

The README page for the terraform directory needs checking and updating.

Known issues are:

• In the diagram:

  • ® marks are not given for the various products (note: I think Debezium is the only one that doesn't need such)
  • Kafka should be Apache Kafka (as this is the first use of the product name in this document)
  • Postgres should be PostgreSQL
  • I believe that the terraform code being described now uses OpenSearch Dashboard, not Kibana

• In the main text:

  • The various product names are first used in the diagram, but it would probably still be a good idea to mark their second use in the main text with ®, for politeness
  • Kafka should be Apache Kafka at least once
  • Postgres should be PostgreSQL throughout
  • An acknowledgement section needs adding to the end (it's called Trademarks in the other documents)
