Add tests

Oh dear, this'll be a whole thing. I'll split this ticket into multiple at some point, but just putting this here for now to remind me. I think I want to learn https://www.cypress.io/

There will probably need to be a test base on Airtable and test project on GCP and then those keys together with Twilio test keys will go into `test/.env` or something.
