ADFA-5026: bump dash-node to 1.1.1

The build that adds /system/dashboard/update-check is a new dashboard
release, so mark it 1.1.1 — otherwise the mainline "available" version
never exceeds an installed device's and the card can't surface an update.
Also realigns package-lock.json, which was left at 1.0.1 from the previous
bump.
