Unable to use startingPosition with AT_TIMESTAMP.

Based on read me, I passed the config
```
.option("kinesis.startingPosition", "AT_TIMESTAMP 2025-07-22T12:00:00Z")
```

However, I still see only the latest data is ingested, meaning its defaulting to LATEST.

Please correct me if I am wrong.
