As I try to connect the remote a pop up says:

Can someone help me out?

If you run into this issue, try running the following command (to terminate the bluetooth process):

sudo pkill bluetoothd

Always Working Method (for me) for Connecting a Wii Remote to Dolphin on Mac

One-Time Setup

  1. Open Dolphin.
  2. Navigate to Options → Controllers.
  3. Set Emulate Wii's Bluetooth adapter.
  4. Under Wii Remote 1, select Real Wii Remote.
  5. Turn Continuous Scanning ON.

Connection Steps

  1. Open Bluetooth settings and Dolphin's Controllers page.
  2. Open WiimotePair.
  3. Press (do not hold) the red Sync button on your Wii Remote. Wait until the lights go out.
    • If you receive a connection prompt, skip to Step 6.
  4. Close and reopen WiimotePair (this avoids a known bug).
  5. Press (do not hold) the red Sync button on your Wii Remote again.
  6. When you see "The Wii Remote has been paired with your Mac", immediately go to Bluetooth Settings, hover over the connected Wii Remote, and click Connect.

Successful Connection

Troubleshooting

  • If you encounter an error, reset the Mac's bluetooth module:

    sudo pkill bluetoothd
