Couple of things:

Apparently there are some issues to be fixed, see: Issues in translation #3
In the Italian.xml file, the date is incorrect: https://github.com/e107translations/Italian/blob/master/e107_languages/Italian/Italian.xml (year is still set to 2017 instead of 2021).
If the language pack is ready to be published, you need to create a new release on Github. See the instructions here: https://github.com/e107translations/Translator-Information
