Add nginx to the EC2 to EKS migration image #961

The imagine in https://2u-internal.atlassian.net/wiki/spaces/AT/pages/edit-v2/1700626434#Definition-of-Success is missing nginx, which was in EC2 and will be in EKS. I guess it would go between the ELB and LMS.

The doc was given the following warning, which could be removed if and when nginx gets added to the image:

(Image is missing nginx, which is also moving from EC2 to EKS.)
