Is your feature request related to a problem? Please describe.
There is no proper way to test the lambda extension locally in a production-like environment.

Describe the solution you'd like
There is a folder for e2e testng using SAM CLI. A possible solution would be to document it, test that it's working and use it. Move e2e testing into a separate submodule would also be nice.
