Managing log file

I'm using Caddy in Docker. I've encountered the following problem.
No matter what I set: debug, info, warn, error on log_severity into the log file is written full data.
If I remove all settings as log_severity, log_json, log_path log file will be written to work folder named debug.json
Because of this, the log file grows very quickly and begins to take up a lot of disk space and doesn't matter I set up log settings or not.
As a temporary solution, I redirect the logs to assets.log or domain log file or rotate it by Caddy, but it is unclear how to remove unnecessary severity data and how do you recommend to manage this file?

I send logs to /dev/tcp/something, i will provide an example this weekend hopefully to fit your use case (and a bit of double check for the logging issue). TY #81
