It's a pitty that the Tailscale app is in the app-store, but not the companion app Headscale, which would be a more self-hosting aimed solution.

Seconding this. Have tried manually switching to my headscale server with terminal but no luck. Umbrel seems to be blocking this somehow as it can't even connect, yet all my other devices can.
