Add replication provider for Zot

Zot is a good edge environment oci registry, but Harbor does not have a replication provider for it.

Zot is becoming a widely adopted oci container registry.

Replicating to the generic registry should work for ZOT too. I have seen that in practice.

The specific adapters are only there to support provider registry-specific auth options (and a few other capabilities).

What do you want the ZOT specific adapter to have that the generic can't cover?
