[feature] Explore wrapping the GraphQL API to allow it to be called via REST #1952

Is your feature request related to a problem? Please describe.
Some people have existing tools that work with REST but don't work with GraphQL. They want to be able to use the lower level GraphQL API, as opposed to the higher level supported REST API.
Describe the solution you'd like
Check out SOFA or a similar tool/library to wrap the existing GraphQL. This shouldn't conflict with any functionality in the supported GUAC api. Also
If this is something that people want and is not too much work we would create a contrib repo for this.
