Corrections needed to NodeNorm Helm charts

• NodeNorm loader and NodeNorm web includes affinity and tolerations sections, but ITRB would like us to also have a separate nodeSelector section (see https://github.com/helxplatform/translator-devops/pull/787/files#diff-99dcb055f97c517b17d96d6412202ecd9734bcc40637e796d58f050f5525e834). We should add this.
• We might need to add nodeSelector to NameRes as well.
• ncats-*-values.yaml files in node-normalization-loader have the old redis_backend_config format, which doesn't matter because it gets overridden by the settings in values.yaml, but we should clean them out at some point.
