New server, different port... not working?

Sorry to keep coming back with so many questions.

I got to the point where the first server is working great, now trying to bring up a second server that they want me to set up with Geyser (not a Geyser related question though, haven't got that far).

I set up the second server in a different folder with the following compose.yaml:

However, when I start the container and check the logs - it says it is starting on port 25565 instead of the 25566 specified - is there something I'm doing wrong?

Always keep the container port of the mapping as 25565.

The port mapping is

{host}:{container}

So change your port mapping entry to

ports:
- "25566:25565"
