Clean up codebase and make ready for development

The original project was designed at MPV stage to pass the 4th of 5 milestone projects required for the the Code Institute Junior Full stack Developer Diploma.
Significant changes are required to prepare the codebase for real-world development for integration into the RSNO organisation.
