Some minor issues

I've got it all setup and talking with radarr but raddar complains that sabnzb is downloading to root folder and shouldn't. Don't know if that will be a problem. Other issues is when I remove the media from Radarr it removes stuff from the completed-symlinks folder but not from content folder. Any help appreciated.

The "Root Folder" that you configure in radarr should not be anywhere on the rclone mounted webdav. it should be some separate folder.

Any folder will do. The root folder is where radarr will create your organized media library of symlinks.

For some more background, when nzbdav is done processing an item, it will tell radarr the download completed in /mnt/nzbdav/completed-symlinks (or wherever you mounted with rclone)

Then radarr will grab the symlinks from there, will rename them, will organize them, and will move them to wherever youve configured your Root folder. So the root folder needs to be different than the rclone mount.

Take a look at the maintenance tab under nzbdav settings. There's a task there that will delete anything in the content folder that is not symlinked by your radarr-organized symlink library
