Update forked repos (mongoose, wolfssl, wolfssh, zlib, libzip)

Hi!

The forked repos under openvehicles are rather far behind their upstreams. It would be nice to sync them to the upstream even if the submodule references are not bumped, since it makes experimenting with building with upgraded versions of them a bit easier without having to switch submodule URL.

Can we also get the fix from @llange into our ovms-specific mongoose branch and the submodule bumped to it, to not have to patch it on ESP-IDF v5+ and get a dirty tree?
