Both adwaita-icon-theme and adwaita-icon-theme-legacy are possible replacements. However, according to nixos.org , adwaita-icon-theme-legacy covers more NixOS release versions than adwaita-icon-theme. Using adwaita-icon-theme-legacy covers versions 24.05, 24.11 and unstable.

Shouldn't the most current version be used; the adwaita-icon-theme?
And the users who need older versions should pin their packages to older versions?

Can this somehow be overridden now so that I can successfully install this app? I am trying to install it via flake, but the error then appears. I am using the unstable branch of nixpkgs. How are you guys fixing this? Can you somehow pin a version or override the buildInputs or something?

Add another input with nixos stable and make nix-software-center follow that input, you can take inspiration in
