What's new in this PR?

Project data and content updates:

• Added two new API projects: "Legendary Pokedex API" and "Chess games API", including their descriptions, technologies, GitHub links, and demo link for the Pokedex API. Also removed and updated technologies for other projects.
• Added a new optional demo field to the Project interface to support demo URLs for projects.

UI and styling improvements:

• Updated the ProjectsSection component to render a demo link button if a demo URL is present for a project.
• Improved the .demo-link button styles for better visibility and consistency with the app's color scheme.

Translation updates:

• Added and updated English and Spanish translations for the new API projects, and removed obsolete entries for replaced projects.
