fix(Discord Extreme List): update author info and URLs

Description

A couple years back I changed my name to Carolina, and I've also created a new Discord account since. (If you want to confirm if I am the author, that should be clear through the previous commits - the GitHub account is the same). I've updated the metadata to reflect that.

Furthermore, the URLs I removed are no longer used by DEL. (We cancelled our .gay domain about 3 years ago, and we haven't used our staging domains since our codebase has been stable at around the same time).
