Add a bunch of snapshot tests

This adds tests for these functions (part of #243):

• analyse_Al2O3_CrossTalk()
• read_SPE2R()
• calc_Statistics()
• calc_IEU()

This also consolidates some code in read_SPE2R() to improve coverage, and add some coverage for the new RLum.Data.Spectrum methods.
