Currently, directory names are misleading - there is no longer a Lookout "v1" and so the only remaining code in "lookout" was the UI. This PR renames and refactors lookout/ui to lookoutui. This will also allow further renaming to remove "v2" suffixes, as "lookout" is no longer claimed.
