Change name from jaxsim to pacesim

We have decided to change the name !

The winner is 🥁 :

PACEsim Physics Aware Co-design Engine

We need to deal with different things to change the name:

• Create a new feedstock for conda

• Create a new pip package

• Create shim package (https://en.wikipedia.org/wiki/Shim_(computing))

• Change repository name

• Change name occurrence

• Bonus: create a logo
