fix: Fixes path generation for all scripts; adds conditional logic

This PR does the following things:

• Changes all of the script files to handle paths in a uniform fashion
• Adds conditional logic to ensure that scripts function well on Mac and Linux.
• Breaks out dist copying functionality to its own script for consistency; makes the required additions to script generation and package.json files.
