This PR updates the Docker container to inherit from the new lightweight Snitch container for software development, shipping a pre-built Verilated model of the default Snitch cluster.
It also bumps the Snitch cluster dependency to the latest version, where the repository has been significantly refactored for clarity and ease of use.
Note: to test the CI a new Docker container has to be built and deployed.
