Updates the README setup guide to match the current repository layout.
The current tree looks like a single Vite app rather than the older monorepo/API setup described in the README, and the referenced
.env.example/apps/api/.env.examplefiles are not present. This removes the stale Postgres and environment-file instructions while keeping the existing pnpm/Vite commands.
