[DOC] Update the lists of resources belonging to different operands

Description

This PR updates the documentaion - the lists of the resources belonging to the different operands. It:

• Updates the Kafka resources to keep it up-to-date with the KRaft related changes (e.g. node pools are not optional anymore)
• Adds the new Role and RoleBindign resources to Kafka, Connect, and MM2 operands
• Unifies the formatting of the resource names to be the same in all lists
