[Improvement] Quickstart refactoring

What's being changed:

• New shorter quickstart
  • Two paths: vectorize data on import or import vectors manually
  • Fewer admonitions, no mermaid diagrams, straightforward next steps
  • Tooltips for more info
• Old quickstart adapted into tutorial "Quick tour of Weaviate"

Type of change:

• Documentation content updates (non-breaking change to fix/update documentation )

How has this been tested?

• Local build - the site works as expected when running yarn start
