Fixes indexing issues when processing non-ASCII strings during markdown conversion.

  • Replace value.chars().nth(*position) with value[*position..].chars().next() for proper byte-based
    indexing
  • Prevents potential panics when handling multi-byte UTF-8 characters
  • Update test cases
